Why does Coconut Milk solidify?

Chef's Choice Coconut Milk is made the way nature intended, with no unnecessary stabilizers and no artificial thickeners. That purity comes with a trade-off, but we choose to keep it that way.  Without synthetic additives holding everything in uniform suspension, the product responds naturally to temperature. Cooling, warming, and movement during storage or transit can cause the milk to separate or solidify, and you may notice slight texture differences from one batch to the next. None of this affects taste, quality, or safety.  It's simply coconut milk behaving like coconut milk.

Coconut Milk Separation Is Normal

We make our coconut milk by pressing fresh coconut meat with water to draw out the rich, creamy liquid inside. Because we skip the unnecessary additives, that liquid can settle over time with a denser coconut cream rising to the top, with a thinner layer underneath. This is simply the natural composition of the product finding its resting state, not a defect.

Cold Weather Can Cause Solidification or Curdling

In cooler conditions, you might find your coconut milk has firmed up, solidified or taken on a curdled appearance. This happens because the natural fats in coconut solidify at lower temperatures.  A good example is to visualize the way coconut oil and olive oil clouds and thickens in the fridge. It's not a spoilage and once the weather warms back up, some of that textural change may persist even though the product itself is unaffected.

Is Solidified Coconut Milk Still Safe to Use?

Absolutely! Solidification is a natural characteristic of real coconut milk and has no bearing on quality, as long as:

— the product is within its expiry date
— the packaging is sealed and undamaged 
— there's no unusual smell or other sign of spoilage

To bring back its smooth, homogenous consistency, warm it gently in a saucepan over low heat, stirring occasionally until it's silky and well blended again.
